Whether for Mother's Day or just because: these golden baked cookies with Farmer's Snack apricot, dark chocolate and a hint of citrus say more than a thousand words. Quick to make and shaped with love. Perfect for giving as a gift to someone you care about.
Ingredients
What you need:
150g Farmer's Snack natural Spanish almonds
50g Farmer's Snack natural Spanish almonds
80g maple syrup
1 tsp vanilla sugar or a little vanilla extract
1 egg + 1 egg yolk
2 tbsp flour
1 tsp lemon zest
1 tsp orange zest
50g Farmer's Snack sulphured apricots
Optional: 75g dark chocolate
Preparation
1. Grind the almonds in a food processor.
2. Whisk the egg + egg yolk with the maple syrup. Add the flour, vanilla sugar, lemon and orange zest and ground almonds and mix to form a dough. Finely chop the apricots and fold in.
3. Portion out the dough and shape into a heart shape on a baking tray lined with baking paper. Bake at 175 °C (top/bottom heat) for approx. 12-15 minutes until the almond hearts are golden yellow.
4. Once cooled, dip the ends of the hearts in melted dark chocolate and top with chopped almonds. Mom will be delighted!
