Mango Pineapple Coconut Tartlets

An exotic dream in miniature: our mango, pineapple, and coconut tartlets combine fruity freshness with creamy lightness. Perfect for summer parties, special occasions, or simply as a sweet treat between meals.
Ingredients
For the base:
150 g Farmer's Snack organic Spanish almonds, natural
130 g Farmer's Snack dates
30 g Farmer's Snack coconut chips
30 g coconut and almond cream
1 pinch of salt
For the filling:
½ mango
6 gelatin sheets
460 g coconut cream
230 g skyr
110 g cream cheese
2 tbsp agave syrup
1 dash lemon juice
For decoration:
Some Farmer's Snack mango-pineapple mix with coconut chips
Preparation
Base:
- Mix 150 g almonds, 130 g dates, 30 g shredded coconut, 30 g coconut almond cream, and a pinch of salt. Place in the pan and press down evenly.
For the filling:
- Puree half a mango.
- Soak 6 sheets of gelatin in cold water. Gently heat 460 g coconut cream (do not boil) and dissolve the gelatin in it.
- In a bowl, mix 230 g skyr, 110 g cream cheese, 2 tbsp agave syrup, and a dash of lemon juice. Stir in the warm coconut cream.
For the decoration:
- Spread half of the cream on the base and top with some mango purée. Repeat with the remaining cream and mango purée and use a fork to create a pattern. Chill for 4–5 hours.
