Hearty walnut Bolognese

This aromatic walnut Bolognese is a delicious plant-based alternative to the classic version. With a hearty blend of walnuts, mushrooms and spices, it provides a wonderfully nutty consistency and is perfect for pasta, tacos or as a filling for vegetables.
Ingredients
250 g Farmer's Snack walnuts
100 g mushrooms (alternatively cauliflower)
1-2 tbsp tomato puree
1 tsp maple syrup
1 tsp dried oregano
½ tsp cumin
2 tbsp olive oil
Preparation
- Place the walnuts, mushrooms, tomato puree, maple syrup, oregano and cumin in a blender and pulse until the walnuts have a mince-like consistency.
- Heat the olive oil in a pan and fry the walnut mixture for approx. 5-10 minutes until it browns slightly and develops an intense aroma.
- The finished walnut Bolognese can be used in a variety of ways - as a pasta sauce, topping for tacos or filling for wraps.
- Serve straight away and enjoy.
Tip:
For a particularly spicy note, the walnut Bolognese can be refined with a little smoked paprika powder or fresh garlic. If you like it juicier, you can add some strained tomatoes when frying.
