Ingredients
Ingredients for a loaf pan:
2 small, tart apples
2 eggs
1 pinch of salt
80 g agave syrup
100 ml sunflower oil
200 g spelt flour (type 630)
½ packet baking powder
1 teaspoon cinnamon
100 ml oat drink
60 g Farmer's Snack walnut kernels
50 g Farmer's Snack baked apple
For the topping:
6 Farmer's Snack walnut kernels
5 Farmer's Snack baked apples
Preparation
1. Grease a loaf pan and dust with a little flour. Preheat the oven to 160 °C (320 °F) convection.
2. Peel and core the apples and cut them into small cubes.
3. Using the whisk attachment on a hand mixer, beat the eggs, salt, and agave syrup until frothy.
4. Stir in the oil.
5. Sift the flour, baking powder, and cinnamon into the mixture and stir in the oat drink to form a smooth batter.
6. Roughly chop the walnuts and baked apples with a kitchen knife.
7. Fold the walnuts, baked apples, and apple cubes into the batter.
8. Pour the batter into the prepared loaf pan and sprinkle with walnuts and baked apple pieces. Bake the apple-walnut bread on the middle rack for about 55 to 65 minutes. Towards the end of the baking time, check with a wooden skewer to see if the bread is done.
