Ingredients

For the filling:
60 g Farmer's Snack walnut kernels
200 g fresh spinach
1 clove of garlic
Salt and pepper
2 eggs
150 g feta cheese
80 g grated mozzarella
1 bunch of parsley

For the rice paper wrappers:
12 small rice paper wrappers
1 egg
2 tbsp soy sauce
150 ml water

Also:
1 tbsp oil
20 g sesame seeds
 

Preparation

  1. Preheat the oven to 200 °C (fan oven) and line a baking tray with baking paper. Wash and drain the spinach.
  2. Roughly chop the walnuts with a kitchen knife, toast them briefly in a non-stick pan and remove from the pan.
  3. Heat 1 tbsp oil in a pan and sauté the spinach.
  4. Press the garlic clove and add to the pan. Then season everything with salt and pepper.
  5. Mix the eggs, feta, spinach mixture, and grated mozzarella in a bowl and stir in the walnuts.
  6. Whisk the egg, soy sauce, and water in a shallow bowl and soak two rice paper sheets in it. Then place them on a board or flat plate.
  7. Place 2 tablespoons of the filling in the middle and fold into a triangle.
  8. Place the rice paper pockets on the prepared baking sheet and sprinkle with a little sesame seeds. Bake in the oven on the middle rack for 25 minutes.
