Ingredients
For the filling:
60 g Farmer's Snack walnut kernels
200 g fresh spinach
1 clove of garlic
Salt and pepper
2 eggs
150 g feta cheese
80 g grated mozzarella
1 bunch of parsley
For the rice paper wrappers:
12 small rice paper wrappers
1 egg
2 tbsp soy sauce
150 ml water
Also:
1 tbsp oil
20 g sesame seeds
Preparation
- Preheat the oven to 200 °C (fan oven) and line a baking tray with baking paper. Wash and drain the spinach.
- Roughly chop the walnuts with a kitchen knife, toast them briefly in a non-stick pan and remove from the pan.
- Heat 1 tbsp oil in a pan and sauté the spinach.
- Press the garlic clove and add to the pan. Then season everything with salt and pepper.
- Mix the eggs, feta, spinach mixture, and grated mozzarella in a bowl and stir in the walnuts.
- Whisk the egg, soy sauce, and water in a shallow bowl and soak two rice paper sheets in it. Then place them on a board or flat plate.
- Place 2 tablespoons of the filling in the middle and fold into a triangle.
- Place the rice paper pockets on the prepared baking sheet and sprinkle with a little sesame seeds. Bake in the oven on the middle rack for 25 minutes.
