Ingredients
3 very ripe or overripe bananas
2 eggs (size M)
1 medium apple (or 150 g applesauce)
2 tbsp oil (e.g. sunflower oil)
1 pinch of salt
250 g flour
115 g Farmer's Snack trail mix chocolate
1 tsp cinnamon
1 sachet baking powder
Preparation
- Preheat the oven: Preheat the oven to 180 °C top/bottom heat.
- Prepare the bananas: Mash the bananas with a fork in a bowl.
- Add the eggs: Place the mashed bananas and eggs in a large mixing bowl and whisk well.
- Process the apple: Peel the apple and grate finely using a kitchen grater. Alternatively, you can use 150 g applesauce. Stir the grated apple, oil and salt into the banana and egg mixture.
- Mix the dry ingredients: Mix the flour, cinnamon and baking powder in a separate bowl and then fold into the wet ingredients until you have a smooth batter.
- Incorporate Farmer's Snack Chocolate Trail mix: Mix the trail mix into the batter.Prepare loaf pan: Grease a loaf tin or line with baking paper. Pour in the batter and smooth out. Optionally, you can garnish the top with some trail mix and a sliced banana.
- Bake: Bake the banana bread in the preheated oven for about 45 minutes, until golden brown and a wooden skewer comes out clean.
- Leave to cool: Remove the finished bread from the oven and leave to cool in the tin before removing from the tin.
