Winter salad
Ingredients
For the salad:
150 g lamb's lettuce
1 orange
75 g soft goat cheese
70 g Farmer's Snack cranberries
60 g Farmer's Snack walnut kernels
For the croutons:
1 slice whole grain toast
1 pinch salt
1 tsp olive oil
For the dressing:
50 ml olive oil
15 ml light balsamic vinegar
1 slightly heaped tsp mustard
1 tsp honey
Salt and pepper
Also:
2 preserving jars (approx. 500 ml)
1 preserving jar (approx. 100 ml)
Preparation
1. Wash the lamb's lettuce in cold water, trim the roots if necessary, and drain. Then fill the large glasses with a handful each.
2. Peel the orange and cut into pieces. Remove any seeds. Cut the soft goat cheese into small pieces as well.
3. Layer the orange, goat cheese, cranberries, and walnuts in the jars and top with a little lamb's lettuce.
4. For the croutons, cut the toast slices into cubes and toast in a nonstick pan with a little olive oil and a pinch of salt until golden brown.
5. Top the winter layered salad in the jar with the bread croutons and close the jars.
Tip: You can also transport the croutons separately so that they stay nice and crunchy.
6. For the dressing, put all the ingredients in the small preserving jar, shake well, and pour over the salad just before serving.
