Summer and salsa? We say yes! The perfect combination of avocado, pistachios, olives and of course our apple boats turns your summer salsa into a fiesta for the taste buds. This salsa is fruity, aromatic and refreshing, so you should definitely give it a try.
Ingredients
| shallot, finely chopped | 1 |
| ripe avocado, diced | ½ |
| Farmer's snack apple boats | 50 g |
| black olives, cut into rings | 8 |
| pistachios, roughly chopped | 2 tbsp |
| spring onion, sliced into rings | 1 |
| small cucumber, diced | ½ |
| small beet, cooked and diced | 1 |
| apple cider vinegar | 1 tbsp |
| fresh coriander or basil (of your choice), chopped | 2 stalks |
| juice of half a lemon |
Preparation
- Heat the olive oil in a pan and sauté the shallots until translucent. Deglaze briefly with apple cider vinegar, remove the pan from the heat and leave to cool.
- Mix together in a bowl with the avocado, apple slices, olives, pistachios, spring onions, cucumber and coriander or basil.
- Add freshly squeezed lemon juice and mix well. Finally, fold in the beet (only at the end so that the other ingredients don't all turn pink) and season with salt and pepper.
- The salsa goes perfectly with various dips such as hummus or cream cheese or with grilled meat or fish.
